I am currently a PhD student in the School of Health and Related Research (ScHARR) and the Institute for Sustainable Food.
My research is focused on biofortification and health inequalities in the UK, particularly how biofortified foods improve the health of the elderly adults. This is part of the H3 Project (Healthy soil, Healthy food, Healthy people), funded by the Institute for Sustainable Food, attached to the programme on Transforming UK Food Systems (TUKFS).
Prior to joining ScHARR, I completed a BSc in Foods, Nutrition and Dietetics at Pwani University in Kenya. I then worked in clinical and non-clinical settings in Kenya as a clinical and community nutritionist, predominantly in the field of medical nutrition care. I completed my master’s degree in clinical nutrition at the University of Aberdeen as a Commonwealth scholarship recipient.
In my masters thesis, I explored dietary patterns and mycotoxin exposure among the UK population.

PhD title: Biofortification and health inequalities majorly among elderly adults.
My longstanding interests are primarily around human nutritional research. While the majority of my work has focused on public health nutrition and food toxicology, I am also interested in health inequalities, sustainable nutrition interventions, food security, non-communicable diseases, food systems and the interplay between diet, lifestyle and health outcomes.
My PhD is focusing on biofortification and health inequalities and understanding the potential role of biofortified (nutrient-enhanced) crops in improving UK diets.
